Star Spangled Chai Porter - 6 gallons

Ingredients

~5.2-6.6 lb Breiss Golden Light LME http://www.amazon.com/gp/product/B003BCUN9M

1 lb Lactose http://www.northernbrewer.com/shop/lactose-1-lb

Yeast

Safale US-05 Fermentation Temperature: 64–74F Attenuation: 78–82% Alcohol Tolerance: 9-11% http://www.northernbrewer.com/shop/safale-us-05-american-ale-yeast

Grain Bag

1 lb Oats, Flaked http://www.northernbrewer.com/shop/flaked-oats-1-lb-unmilled

1 lb Carapils® Malt http://www.northernbrewer.com/shop/briess-carapils-malt

1 lb Amber Malt http://www.northernbrewer.com/shop/crisp-amber-malt

1 lb Chocolate Malt http://www.northernbrewer.com/shop/briess-chocolate-malt

Hop Bag

1 oz Northern Brewer (DE) hops http://www.northernbrewer.com/shop/german-northern-brewer-hop-pellets

Tea

8 oz Star Spangled Chai Tea https://thedevoteausa.myshopify.com/products/star-spangled-chai

Steps:

  1. Prep your yeast (1 tsp sugar + some water ~100F should)
  2. Prepare Grain Bag (oats, 3 malts)
  3. Prepare Hop bag (1oz)
  4. Prepare Tea Bag (8oz)
  5. Put 4 gallons of water into pot
  6. Add grain bag
  7. turn on burner/heat
  8. bring to 170F
  9. Pull up grain bag - drain - set aside to cool
  10. bring to 210F
  11. Add the liquid malt extract (LME) - stir frequently - watch out for boil over - don't put on lid
  12. Bring to 212F
  13. Start 60 minute timer
  14. 0 minutes - add hops
  15. 45 minutes (of boil) add lactose
  16. 50 minutes - add chiller and tea (or you can do tea in secondary)
  17. After you boil it 60 minutes (+15 from lactose), cut off heat and cool to 80F
  18. Put Safale US-05 yeast into fermentor
  19. Strain and pour in wort
  20. Add more water to bring amount to 6 gallons
  21. Record Starting gravity
  22. Ferment at 64-74F for ~2 weeks

Notes:

  • 3.3 lbs Brewers Best Unhopped Light Liquid Malt sub for Breiss Golden Light LME (ah! i should have used 2 cans!)
  • 1 lb Crystal malt sub for Amber Malt
  • 1 oz Cascade hops sub for Northern Brewer (DE) hops
  • Spiced Chai (114g assam + 100g ceylon + 3g corse cracke dpepper + 5g cinnamon bark + 3g whole cloves + 5g star anise) sub for 8 oz Star Spangled Chai Tea

used too warm of water (~110f) to proof yeast, and too little water (it was active though)

went to 180 not 170 on grain steep

immediately added the LME instead of waiting, also only half expected LME

Could not get it up to 212 only 205 after adding LME so at 205 added hops

forgot hops bag

45 for lactose

50 for tea and chiller

added yeast into fermentor last not first

added only half LME, added rest 2 days later

about 65F
