Lady Devotea India Pale Ale - 5 gallons

Ingredients

6.6 lb Breiss Golden Light LME http://www.amazon.com/gp/product/B003BCUN9M

3.3 oz Citra (US) http://www.northernbrewer.com/shop/citra-leaf-hops-1-oz

Test Batches

1 Lady Devotea - 8oz per 5gal (1.6oz) Orange Peel - .5oz per 5gal (.1oz)

2 Lady Devotea - 8oz per 5gal (1.6oz) Orange Peel - none

3 Lady Devotea - 12oz per 5gal (2.4oz) Orange Peel - .5oz per 5gal (.1oz)

4 Lady Devotea - 12oz per 5gal (2.4oz) Orange Peel - none

Steps:

Prep your yeast (fermentation is 68-74 attenuation 73 to 80)

Steep in grain bag while bringing to 170F - we used 4 gallons to start

  • Caramel Malt 20L
  • Carapils® Malt

Pull up - drain - set aside to cool

Add the following - and stir frequently - watch out for boil over - don't put on lid

Add to boil right before 210F

  • Breiss Golden Light LME
  • Golden Light DME

Let reach a boil. 212F 0 minutes -- Add hops

  • 1.1oz Citra (US)
  • Cascade (US)
  • Centennial (US)

Start timer.

10 minutes add (10 min total time)

  • 1.1oz Citra (US)

5 minutes add (15 minutes total time)

  • Irish Moss

25 minutes - put in chiller if you have one, copper wires (40 minutes total time)

45 minutes add (60 minutes total time)

  • 1.1oz Citra (US)

Cut off heat

Cool to < 90F

Put yeast into fermentor, pour in wort and strain out hop particles

Add more (sealed distilled) water to bring amount to 5 gallons

Record Starting gravity

When it is time to racking into a secondary fermentation add

  • tea
  • orange peel

Opinion

good flavor! hoppy but not too much - you can taste the lavendar, oranges, and oil of the bergamot. The hops and tannins of the black tea blend together.
