chore: bump version to 1.0.7

This pull request removes the GitHub Actions workflow that automatically bumped the version in pyproject.toml on release, and manually increments the version number in pyproject.toml to 1.0.7.

Workflow removal:

• Deleted the .github/workflows/bump-version-on-release.yml workflow, which previously automated version bumps in pyproject.toml upon release creation.

Version update:

• Updated the version field in pyproject.toml from 1.0.6 to 1.0.7.
