It looks like it's also referred to as a Cash Value Voucher (CVV): http://www.fns.usda.gov/wic/ebt/cvvreport.htm
The full term seems to be WIC Cash Value Voucher, as used here: http://www.iowaagriculture.gov/Horticulture_and_FarmersMarkets/pdfs/2012FMNPHandbook.pdf

I'm not sure what term WIC clients would relate to, but if we stick to WIC Cash, we should use 2 words. I can't seem to find "WICcash" being used elsewhere.

I suspect this is the same as accepting WIC? The farmer's market http://www.smc-connect.org/organizations/pjcc-farmers-market-at-foster-city has both WIC and WICcash listed. I interpret that field to mean a client enrolled in a particular program (SNAP/CalFresh, SFMNP, etc.) can pay with the benefits of that program. Meaning if WICcash (or WIC CVV) is a part of WIC, it would be accurate to only say "WIC" is an accepted form of payment. If they are separate payment methods (e.g. benefits of different programs), then "WIC" should have a qualifier that says it's WIC without the CVV. Like @monfresh said it at least needs formatting help.
