refactor: Remove unused rekor.pub (#1640)

https://github.com/sigstore/sigstore-js added TUF integration in v1.0.0 so our rekor public keys aren't needed anymore. We bumped sigstore-js to v1.0.0 in #1630 Signed-off-by: Ian Lewis <[email protected]>
