Which problem is this PR solving?

• This updates the dependencies for the MongoDB example for issue Update examples and only use Console Exporters #2528.

Short description of the changes

• Updates all dependencies to latest.
• Remove deprecated jaeger exporter
• Update deprecated service name attribute
