Migrate the package to swift 6

Description

The migration includes:

• migration to Swift 6
• migrate the demo app to SwiftUI
• migrate test to Swift Testing

Motivation and Context

Use the latest Apple available technologies.
Note: minimum target now is iOS 15 + tvOS 15 + macOS 12 + watchOS 8 + ubuntu (where swift 6 available)

How Has This Been Tested?

CI/CD + manual test using docker
