The build script changes look good and reasonable, but as said in the other comment, i'm not sure about using the upstream source here

I would keep vendoring the sources, as my plan is to gradually rewrite zfat fully in Zig to make the library less pain to use

Is it even possible to rewrite it piece by piece?
