chore: Updated versioning strategy and changesets config

Description

This PR adds new changesets config to bump all packages to the same version when a change is made to one package. This will help with any future debugging of consumers issues. contriubution docs have also been added with updated versioning strategy.

Example apps were also added to changesets

Type of Change

• Bug fix (non-breaking change which fixes an issue)
• New feature (non-breaking change which adds functionality)
• Breaking change (fix or feature that would cause existing functionality to not work as expected)
• This change requires a documentation update
