Evaluate the need for thermocouple filtering on ADC input. Quite possible that much of the circuitry can be after the MUX meaning an eighth as many components: http://www.ti.com/lit/ug/slau509/slau509.pdf Also keep in mind some of the features may already be part of the IC.
