Describe the feature

This is a request to document all possible environment variables that can be used to customize the self-hosted version of Terrateam.

Why is this feature important?

I think it's important for people who are evaluating the self-hosted version to be aware of all the settings that can be changed as part of the self-hosted version of Terrateam. Especially for turning off features like telemetry for clients that are not comfortable with sharing this data.
