[bug]: running docker pull streamnative/snmcp failed.

Hi team,

I run `docker pull streamnative/snmcp`  at my laptop. It failed with the following error:

```
Using default tag: latest
Error response from daemon: no matching manifest for linux/arm64/v8 in the manifest list entries: no match for platform in manifest: not found
```

My laptop  Mac, MacOS is 15.3.1 .
