Presentation Tool config should have "editorMode" flag #3048

Is your feature request related to a problem? Please describe.
When my users enter the presentation tool, they usually start out by using the navigation to find a page that they want to edit. However, since the navigation is dynamic content, clicking these items instead opens their editor and they're stuck on the home page.
Describe the solution you'd like
The sanity.config.json file should have an option where it opens with the edit switch turned off.
Describe alternatives you've considered
Honestly maybe it should just be off by default?
