Add code coverage reporting in CI

Problem

We do not know which parts of the codebase are actually exercised by tests.

Proposal

Enable coverage builds (gcov/llvm-cov) and publish a summary in CI artifacts.

Alternatives considered

No coverage tracking.

Additional context

Helps prioritise testing work.
