Create .config directory in dotfiles

Certain roles from the pajuna/Ubuntu-LTS repo create symlinks in ~/.dotfiles/.config/ which fail to be created as the directory doesn't exist.

Suggest creating the .config directory in pajuna/dotfiles, or updating roles to check/create ~/.dotfiles/.config before creating the symlink.
