How to manage embeddings?

I have no idea how embeddings work. I have few questions which I cannot find answers for (read docs, searched the web as well).

BTW, I am referring to the Jan Windows desktop app v0.7.5

1. When I am using a model (having chat open), how to find out which embedding model is being used?
2. How to manage embedding models, like removing or adding new ones?
3. When I upload files, do they stay with that model forever or just for the current chat (conversation)?
4. If embedded documents (attachments) remain on disk, how to select which ones to include into the conversation? I wish they can be chosen in the Assistant settings only once, so I don't have to attach them with every conversation.
5. Are there any way to manage embedded attachments? Like to add/remove them for example separately (not in the chat).

For reference:

• Embedding model - for example nomic-embed-text or all-MiniLM-L6-v2
• Embedded documents (attachments) - are indexed documents for Retrieval (RAG) as local vector databases
