What is the issue?

Fix the new documentation version generation GitHub workflow to use konstruct-bot instead of kube1st, and sign using SSH key instead of GPG.

For now, if you need to generate a new docs version, ask @fharper please.

To generate it manually on the repository clone, run npm run docusaurus docs:version 2.7 as an example.
