The scripts and documentation for building an Amazon AMI, and some convenience scripts for setting up a Malcolm demo are based on Amazon Linux 2, which has been deprecated and will be EOL next year.

This issue tracks updating them to use Amazon Linux 2023, which is the replacement for Amazon Linux 2.
