The AppImage is missing a .DirIcon file.

Possibly this is an electron-builder issue?

@probonopd I've tried many suggested solutions to fix this and so far no luck. I will keep this open until fixed.

Every AppImage needs to contain an AppDir, every AppDir needs a top-level .DirIcon file. Please use a 256x256 px png. (linuxdeployqt puts the main icon specified in the desktop file there, but electron-builder is not using linuxdeployqt.)
