Some Admin API Open API definitions do not provide examples

Description
The Admin API Open API definitions do not provide examples for the payload, thus it is not possible to try the PUT and PATCH paths.

Steps to Reproduce

• Enable admin API in the pygeoapi config
• open the Open API swagger page on /openapi and scroll all the way to the admin section. Try one of the PUT or PATCH examples, by clicking "execute".

Expected behavior
The server should return a 200 or 204 code and update the configuration. Instead we get a 404 error.
