Split from #3, things to do:

add profile scope
allow using profile scope with GET /api/v1/accounts/verify_credentials
add GET /oauth/userinfo endpoint (see: Add userinfo oauth endpoint mastodon/mastodon#32548 )

I think now that we've fixed scopeRequired to check any of the scopes to be valid, the first two should be relatively straight forwards.

The last probably should wait until that PR merges.
