Expected behavior for intercept when mocking API twice.

I haven't found the expected behavior of what would happen if I mock up an API endpoint with intercept twice with two different responses.

Example:

    cy.intercept(
      {
        method: "GET",
        path: "/api/endpoint"
      },
      {
        statusCode: 200,
        body: { test: "one" }
      }
    );

    cy.intercept(
      {
        method: "GET",
        path: "/api/endpoint"
      },
      {
        statusCode: 200,
        body: { test: "two" }
      }
    );

// When that API endpoint is called in my test, the interceptor returns the first interceptor response: { test: "one" }

I expected this to be identical to route.
ex:

    cy.route({
      method: "GET",
      url: "/api/endpoint",
      response: { test: "one" }
    });

    cy.route({
      method: "GET",
      url: "/api/endpoint",
      response: { test: "two" }
    });

// When that API endpoint is called in my test, the route stub returns the second response: { test: "two" }

What are the expectations for intercept when stubbing an identical endpoint twice?
