I saw, that besides the switch itself you have added the LEDs control and temperature reading. Could you also add a power consumption reading?

under current circumstances, there is no fitting accessory type in HomeKit which can display power consumption.

For example the homebridge-mi-aqara plugin adds to the Home app a sensor that displays an illumination in lux. Is it possible to add such sensor that will be displaying the power consumption showing a number only, or a number with the unit "W" or watt?

What about "HMServiceTypeAccessoryInformation", "HMCharacteristicValueContactState"? Might be a matter of repurposing.

Alternatively, is it an option to show whether the outlet is drawing power or not? i.e. "Hey Siri, is the outlet active?"
