Bug Description

Pre 1.8 players unable to join with above server error and IndexOutOfBoundsException on client side

Issue persists with latest version of viaversion, viabackwards and latest dev version of viarewind and viarewind legacy support

Steps to Reproduce

1. Log in with pre 1.8 client
2. Crash

Player joins as normal

Running purpur purpur-1.21.1-2287 with plugins: AntiCrasher, AuthMe, ChatFilter, Essentials, floodgate, Geyser-Spigot, GeyserUpdater, LuckPerms, ProtocolLib, SkinsRestorer, ViaBackwards, ViaRewind, ViaVersion, XClaim, zDiscord

• Via plugins are only running on EITHER the backend servers (e.g. Paper) OR the proxy (e.g. Velocity), not on both.
• I have included a ViaVersion dump.
• If applicable, I have included a paste (not a screenshot) of the error.
• I have tried the latest build(s) from https://ci.viaversion.com/ and the issue still persists.
• I have looked at https://www.spigotmc.org/resources/viarewind-legacy-support.52924/ and it does not offer a fix for my problem
