Since I updated my OS, the OSX menu bar doesn't show an icon anymore, just letters. In the touch bar, no icon is visible at all anymore.

Since there are no icons anymore it does not show anything. Try to make your own keyboard layout using the Ukelele app and adding any icon you like. Worked for me.

It'd be nice if it could just show the keyboard name abbreviation, like the menu bar does, e.g. "GB", no?

I guess it is a matter of taste. Even if it did though I would still change it.
