Support for e-ink displays #561

Yes, e-ink display technologies that have gained in popularity recently should be supported by a dedicated plugin in tcMenu.
Probably the quickest way to proceed is to support https://github.com/ZinggJM/GxEPD2 library via a plugin. Longer term maybe some displays could be added to our direct graphics library but this is outside the scope of this issue. They would be implemented for direct use as needed.
Describe the solution you'd like
Create a plugin that can instantiate the right display object for the board, and prepare the eink display for menu use.
Add an extra theme for greyscale will be required.
