Update Documentation in line with Docker Compose v2

With the deprecation and removal of Docker Compose v1 from GitHub Actions, our current CI environment, our documentation should be updated to reflect the use of Docker Compose v2.
This update will ensure that new developers and contributors use the latest tools locally and avoid potential issues caused by the missing v1 commands.
