Start list of events using template CoC

I've incorporated the new RCDI CoC in the new R Consortium-funded R Community Collaboratives project, which I'm leading. You can find our CoC for the Chicago R Collab online. We had to adapt some of the language as we are not running a conference but an informal community unconf/hackathon event. Thank you all for putting together a template for us to use!

I'd like to bring this up at an upcoming RCDI meeting, as it would also be great to start a list (markdown, Wiki, anything) of events using this CoC, to encourage wider adoption.
