I asked on reddit and the only change that seems to work for having parts of SMPlayer change(like the background colour of the controls) is to use a styles.qss file. It seems to override the active theme in use, but from what I can tell, DE themes don't seem to be QSS based, so I can't just take the QSS of a dark theme.
I'm not sure how many other users prefer to only have some apps or parts of their DE dark themed and the rest light themed, I've raised an issue here, as it would be more useful as a generic base style rather than specific to SMPlayer I think.
For clarity, I placed the file at /usr/share/smplayer/themes/PapirusDark/style.qss. In SMPlayer settings, the Icon set is PapirusDark, the Style drop down beneath that is Breeze(there is no Breeze Dark listed here, but perhaps this would be more appropriate).
