Switch 6" bolts to 7" bolts in assembly instructions #7

The dozuki guides use 6" bolts in many places which may not have quite enough room when we add lock washers. Update all the guides to use 7" bolts instead of 6".

Once the guides are updated, we'll need to regenerate the bill of material.
